Hi, Im new to this game, starting just yesterday, lv 15
rite now notable unit I have:
- Athena Kiera Mage
- Hercules Vincent Slayer
- Hercules Kai Thief 
Which training path should I choose for those units?
and what is non 5*able units for in this game?

Athena Kiera go for Elementalist for PVE (Normal to Heroic quest mode while Legendary quest mode not really in good use), PVP and Gold Event.
As for Vincent and Kai, I can't be much help for it, sorry.
Quite a number of heroes are unable to promote to 5* for example like: Leon.

Athena Kiera go for Elementalist for PVE (Normal to Heroic quest mode while Legendary quest mode not really in good use), PVP and Gold Event.
As for Vincent and Kai, I can't be much help for it, sorry.

I read some topics about elementalist being nerfed, is it still good? or warlock better?
for non 5* units, I mean, what are they used for.. is it for training food or can be used for something else..

I started almost the same as you except getting Lucille instead of Kiera. 
Since you have Vincent at Slayer I'd make him a Berserker to help you plow through story until Legendary. And I heard Magebane is the most popular class on Shadow. 

I had both Kratos Vincent Lancer and Kratos Vincent Rogue. made them both to Dragoon and Ninja and used them to clear everything on Normal and Heroic. Dragoon and Ninja are really useful on Gold Mine as well on PvP despite their bad faith. 
Don't sweat about the faith for now. you gotta use whatever you have to progress the game until you pulled better units.

For Kai i highly recommend Ninja
