So, I already have a good team for PvP, but when I used my valiant ticket, I gotten a 3* Ares Freya, should I replace my Zeus Vincent Warlord into a new Ares Freya Warlord or ?

Freya Berserker hands down.

Here's an insight of what should you do:
You said you have a stable PVP team, but how about PVE team? cleared whole legendary 24-3 quest? (At least 1 star each)

If yes for above, I think you can do freely of what you want, to Train Warlord Freya (actually you can use them both, proc attack all the way)
IF NO, I recommend Dragoon Freya : Stun aura and One of the stronger stun in-game (2 turns instead of 1)

No I haven't managed to even beat 18-3 yet. My PvP team consist of Leon Zeus Zealot LB +3, Cybella Hera Gunslinger, Kai Ares Samurai, Lucille Hercules Inquisitor and Vincent Zeus Warlord. Not sure why I can't beat 18-3 on legendary..

I'm in no place to judge you, but you might try +2 for all the 5* and rmb to equip sets item/ +15/ then you can try to figure out whats wrong~
Btw, if you fully geared your Freya (Dragoon or Warlord or somesay glass nuke Berserker) you can try swap out Leon or VIncent~
But all in all, DEBUFF is the key to clear legendary, Dragoon really helps here, with your Samurai and 2 trigger fest : Warlord/Gunslinger.

Umm, I think there is a misinformation here.
Freya's Stun duration only last for 1 turn, both active and aura.
The only 5 Area stun for 2 turn(s) that I know is Magebane Shizu.
