can we use monsters for merging? like can i use dark baron, gryphon lord to merge into a 5* hero?

Yes, you can.

hmm ok thanks... probably i'm doing something wrong, my maxed baron not showing up in the merge menu.

if the hero is still in squad or locked, you can't use such hero to merge

oh yes silly me, i left him alone in a formation i used to lower tower difficulty. Thank you!
